||Add salt to water in a medium pot. Boil water and cook macaroni to al dente.
||Right after you add the noodles to the boiling water, start melting butter in saucepan. Add Flour, paprika and salt and pepper. Stir continuously for about two minutes until a (paste) roux is formed.
||Add milk gradually, stirring frequently over medium heat until it comes to a boil. Turn down heat to low and continue stirring until the sauce thickens, about 2 minutes, then turn off heat. Add cheese little by little, stirring until melted, until you’ve used up 3/4ths cup of cheese. Save remaining cheese. Turn off heat.
||Move an oven rack to second position from the top. Turn on broiler.
||Drain cooked pasta and add pasta to cheese sauce. Stir to coat noodles.
||Add noodles to oven safe dish. Top with remaining cheese. Broil dish for 3-5 minutes until cheese melts and starts to bubble.
